For the first time on the Café Pista menu, we present to you a Gesha variety coffee! This variety originally comes from the village of Gesha, in Ethiopia. Subsequently introduced to Central America, notably in Panama, it gained popularity after winning several coffee tasting competitions. Renowned for its exceptional and complex flavor profile, Gesha is a variety of coffee that is difficult to grow. It requires specific conditions of altitude, climate and care to produce its distinctive characteristics. Additionally, yields from coffee trees are lower, which contributes to its rarity and market value. This is why we are so excited to introduce you to this coffee imported via our partner Forest Coffee

It comes from the Bella Alejandria farm of producer Wilder Lazo, in Huila, Colombia. Wilder Lazo is a trained veterinarian, specializing in livestock breeding. When the price of coffee continued to fall in 2016 and his father became seriously ill, he and his brother decided to turn around the family business on the farm. His experience in genetics combined with his great thirst for learning pushed him to carry out several analyzes of soil samples which made it possible to properly target the fertilizers and nutrients necessary for their land. The impact has been so positive that they now have a dozen distinct varieties on their farm and are doing several experiments with their batches of coffee, as is the case here. 

This Gesha undergoes an anaerobic fermentation process for 140 hours, which accentuates the floral and lemony notes. It is then exposed to the sun for 18 days with tangerine peels for extra zest that infuses and adds depth to the flavor profile. It finally undergoes a stabilization period of 25 days after exposure to the sun before the final grand stage of the mill.

This coffee offers a memorable tasting experience. It reminds us of green tea, orange and the sweet floral aromas of jasmine and rose.
