This coffee represents one of the most cherished projects for the Café Pista team. Indeed, we have supported the Azahar Coffee initiative in the El Naranjo community since our beginnings as roasters in 2018. Due to its strong social and cultural impact, the project behind this coffee is a natural choice for us, and we are committed to revisiting it year after year.

Originating from the municipality of Yacuanquer in the Nariño region of Colombia, this coffee is part of the Proyecto Recolectores, launched by Azahar Coffee in 2018 to support and enhance the essential work of coffee pickers. Despite the social devaluation of this profession, the program highlights their expertise through specialized training and compensation that far exceeds local standards. The project is now a great source of pride for the El Naranjo community, and we are happy to participate in it for several years.

For this year's harvest, the coffee comes from the La Macarena farm, run by Álvaro Iván Muñoz Gómez, a passionate producer from a family of coffee growers. Located at about 2,000 meters above sea level, the farm benefits from a rich and diverse environment, combining crops, dense vegetation, and protected forest areas. Álvaro primarily cultivates the Castillo, Caturra, and Colombia varieties, with a particular focus on soil health and environmental sustainability.

The harvest is done manually, with a rigorous selection of fully ripe cherries. The lot is then fully washed, with a traditional fermentation of 18 to 24 hours, followed by patio drying for 10 to 15 days. This meticulous work results in a clean, balanced, and expressive cup, true to the identity of Nariño. Round and sweet, it can be enjoyed as both espresso and filter coffee, offering a delicate espresso or a complex filter.
