We’re delighted to present this coffee from India for the first time, from a producing country that’s still a rare find on our menu. Gundikhan Estate belongs to the KaadKaapi collective, a group of eight producers from the Chikmagalur and Coorg districts, united by a shared conviction: without profitable coffee farms as a way to preserve native forests, those forests will soon be replaced by commercial activities offering easy profits but causing long-term damage. Their answer to this challenge? Quality. Thanks to our importing partner, Osito, we have access to this exceptional lot.

The collective is organized and exported by Dinesh Pejathaya, a conservationist and a central figure in India’s coffee scene, who brings together these producers, with their varied backgrounds, ages, and origins, around a shared commitment to rigorous environmental conservation. Among them, Saif Ulla and his Gundikhan Estate farm stand out for their particular dedication to bringing coffee excellence and respect for wildlife together. Elephants, tigers, gaurs (Indian bison), and a wide variety of birds roam freely across these lands, which requires significant investment in dense forest cover, at the cost of lower yields. This is precisely why specialty coffee production is essential: the premiums it generates help fund these nature-friendly farming practices.

Grown between 1,300 and 1,400 meters above sea level in the village of Jagra, one of India’s highest-altitude growing regions, the Chandragiri (Sarchimor) variety is washed. The cherries are picked at full ripeness, hand-sorted, and mechanically density-sorted before being pulped. The coffee is then fermented in tanks for around 18 hours before being mechanically washed to remove the mucilage. It is then dried on raised beds and patios for around 15 days, under shade and in a polyhouse, until it reaches the target moisture level.
