For the fourth consecutive year, we are pleased to present a coffee that is particularly dear to us: Pastor Ordoñez, the first in our Colectivo series. The coffees represented under the Colectivo label come from the Monkaaba collective in the San Agustín region of Colombia. It is producer Esnaider Ortega-Gomez who leads this program, providing local producers with access to the specialty market while deepening their knowledge, quality, and profitability of their product through educational support.
Pastor represents the third generation of coffee producers in his family, who were among the first to start coffee cultivation in the region. Following the family tradition, his farm began with about 4000 trees of the Caturra variety. Today, Pastor cultivates trees of different varieties, including the magnificent Bourbon Rose, which gives us this incredible sweet and refreshing coffee. Due to his extensive experience and various roles within local organizations, Pastor Ordoñez has established himself as one of the pillars of the Monkaaba collective. The Café Pista team is very honored to have this coffee year after year.
Grown at an altitude of about 1800 meters, this coffee is made up of the Bourbon Rose variety. The cherries are picked at full ripeness, sorted by flotation and then by hand, before being placed in the mechanical depulper for 12 hours and then depulped. They then ferment dry for 36 hours, before being washed 3 to 5 times to remove the remaining mucilage and slowly dried on raised beds for 8 to 30 days.
Its delicate profile and medium roast make this coffee a perfect option for espresso or filter.
