In the heights of Guji, between 2,000 and 2,150 meters above sea level, the Tima lot is prepared at the Weessi washing station, operated by Sookoo Coffee and its founder Ture Waji. Located in Hangadhi, in the Shakisso district, the station processes cherries harvested at full ripeness using a washed method. After depulping with a Penagos machine, the beans are fermented in water for twelve hours, then slowly dried on African beds.
We have been working with Ture Waji for six years now, primarily through the Bookkisa lot. This year marks a first: the addition of the Tima lot to our menu. Ture continues to refine his approach, and his washed coffees reflect great care at every stage, from cherry selection to final drying.
The Tima offers a clear and balanced expression of the Guji terroir. In the cup, we find notes of melon and citrus, a soft structure reminiscent of black tea, and a subtle floral finish. A clean, precise, and bright coffee that highlights Ture's mastery and the uniqueness of this region of Ethiopia.
