For the third consecutive year, we are delighted to welcome back Bookkisa, one of the most popular coffees on our menu. This lot comes from the hamlet of Bookkisa, in the forested and mountainous region of Guji, in southern Ethiopia. A true mosaic of microclimates, rich volcanic soils, and ancient forests, Guji is now recognized as one of the country's most iconic terroirs.
This coffee is the result of the work of 33 producers whose farms, of the "garden" type, generally do not exceed 2.5 hectares. Their cherries are hand-picked at full maturity, then transported on foot – often at night – to the Dambi Uddo washing station. It is there that Ture Waji, also known by the nickname "King of Guji", takes over with his dedicated team.
Founder of Sookoo Coffee, Ture is a central figure in the coffee scene in Ethiopia. In addition to producing some of the best coffees from Guji, he invests directly in his community through infrastructure development, educational programs, microfinancing, and a "Women First" policy in his washing stations. Working with him for three years now is a privilege we do not take for granted.
This batch, imported thanks to our partner Osito Coffee, was harvested at 2175 m altitude between November and February. The cherries were carefully sorted, then dried on African beds for 21 to 28 days, following a strict protocol aimed at maximizing drying quality. The Bookkisa is composed of varieties 74110 (Gibirinna) and 74112 (Serto), selected for their excellent aromatic potential.
