At the heart of the lush hills of Shakiso, in the Guji zone, lies the Suke drying station, one of the first foundations of the Sookoo Coffee project led by Ture Waji. Located between 2,000 and 2,150 meters above sea level, it receives cherries from about thirty-five small producers from the Shoondhisa sub-kebele.
It has now been six years since we started working with Ture Waji, through the Bookkisa lot. This year marks a first: the addition of the Shoondhisa lot to our menu. Ture is recognized as one of the most rigorous and visionary producers in Guji. Since the creation of the Suke station in 2017, he has established himself as an essential player in Ethiopian coffee, providing small producers with a stable and fair outlet. Where many lack the infrastructure to process their coffee, Sookoo Coffee ensures a transparent, fair, and sustainable supply chain.
The cultivated varieties, Gibirinna 74110 and Serto 74112, are processed using the natural method, where whole cherries are slowly dried on African beds. Careful and gradual drying allows for the concentration of sugars and reveals the aromatic complexity unique to the region. All cherries delivered to Suke come from organic farms, perpetuating an approach that is both traditional and respectful of the Ethiopian forest ecosystem.
