After Spice Up and Intango, we are happy to offer you a third exceptional coffee this year. This very surprising coffee with fruit aromas and a tropical flavour comes straight from Valle del Cauca, in the south of Colombia. Produced by Wilton Benitez on his Granja Paraiso 92 farm, this exceptional batch is the result of extraordinary work involving know-how in coffee culture, knowledge of microbiology and experience of more than 25 years. Wilton Benitez and his team have at their disposal a real laboratory allowing them to select and inoculate the best possible yeasts in order to create coffees with a surprising profile. The use of bioreactors and specific microorganisms to control fermentation, together with the constant monitoring of factors such as pH, Brix and electrical conductivity, make Granja Paraiso 92 one of the most innovative farms, offering their coffees a greater value. The coffees produced by Wilton Benitez are real gems that we can't wait to share with you. This new collaboration was made possible thanks our partner Macarena Cafe.
Grown at an altitude of around 1900 meters, this coffee is made from the Bourbon variety. The cherries are picked when fully ripe before being sterilized, sorted and profiled. The cherries are then placed in a hermetically sealed tank for a first fermentation phase of 52 hours, before being pulped and fermented a second time for 48 hours. Finally, the coffee is extended for slow, even drying. Incredibly fragrant and sweet, we love Granja Paraiso in filter or espresso.
This exceptional coffee develops aromas of cherry and passion fruit, on a very sweet finish reminiscent of honey.
