ORIGIN INFORMATION
For the first time on our menu, we present a coffee from Herminio Perdomo and his farm: Finca Monte Nevado. This farm is located in Belen, in the Ocotepeque region in western Honduras.
Herminio Perdomo is a producer very involved in his community. He manages the CAFESCO cooperative, a company dedicated to promoting the production of specialty coffee in the area. The cooperative sources its supplies from more than 400 producers in the region, regularly purchasing coffee cherries directly. This allows them to manage the entire processing of coffee at their washing station and ensure exceptional quality as well as a fair salary for producers.
Finca Monte Nevado offers fantastic conditions for growing coffee. Herminio has planted a significant amount of shade trees which ensure the protection of the coffee trees during the hotter months. Production is certified organic and bird-friendly with 50% of the plantation area shaded by native tree species, helping to preserve local flora and fauna, while protecting its ecosystem.
Grown at an altitude of around 1800 meters, this coffee is made from the IHCAFE90 variety. It is picked when fully ripe and sorted by flotation first, then by hand, in order to remove the cherries that are too ripe or not ripe enough. It is then mechanically depulped then passed under a stream of water to remove the remaining mucilage. Finally, it is laid out on raised beds for 25 to 30 days for slow and even drying. Round and sweet, this coffee is perfect for espresso or filter, offering a fruity espresso or a complex filter.
This round and sweet coffee has a taste of peach and lemon, with a texture reminiscent of honey.
