INFORMATION ON THE ORIGIN
It is with great pleasure that we are once again reunited with Luis Ordoñez's coffee,for the second year in a row. Luis is a coffee producer from the Amatenango de la Frontera region, in the province of Chiapas, Mexico. He owns 4 farms, all located on the border with Guatemala, including La Piedra, where this coffee comes from. This year again, our partner in the field Cafeologia, as well as our importing partner Osito Coffee, accompanied Don Luis in carrying out his harvest. The result is, once more, sensational. The different batches produced this year by Luis are characterized by great maturity and the complexity of exceptional aromas. Among these, we have chosen the best in order to satisfy the most demanding and offer to as many people as possible the opportunity to taste an exceptional coffee.
Grown at an altitude of around 1,500 meters, this coffee is made from the Bourbon and Typica varieties. It is picked at full maturity and sorted by floatation first, then by hand, to remove overripe or underripe cherries. It is then mechanically pulped, then dry fermented for 24 to 36 hours, before being laid out on a patio for 7 to 10 days for slow and even drying. Particularly complex, it offers depth as much in filter as in espresso.
