INFORMATION SUR L’ORIGINE
We are pleased to introduce our new coffee from Peru, La Palestina. The story of La Palestina farm began over 40 years ago when the patriarch, Don Juan Alarcon, purchased this remote land above the village of El Triunfo in San Jose de Alto, in the district of Cajamarca. Today, Juan's sons have taken over the farm's operations and manage their respective lots.
La Palestina is the largest farm in the Origin Coffee Lab network, with 11 hectares spread over 7 fields. During harvest, the entire family collectively picks and processes the beans together to maximize efficiency. They all have their own specialties in the cultivation and processing chain. This allows them to have very consistent results in the quality of their coffee.
Origin Coffee Lab is the exporter in Peru that has made this purchase possible. The core of their mission is to impact the lives of producers through their project called "Solidario". In this project, they teach both financial and agricultural techniques to make sustainable change possible. The progressive Solidario model aims to improve agricultural practices and make coffee growing a sustainable future for the community. This new relationship with La Palestina and Origin Coffee Lab in Peru was made possible by our import partner Apex Cofee.
Grown at an altitude between 1400 and 1750 meters, this coffee is composed of the Bourbon, Caturra, Catuai, Typica and Catimor varieties. It is picked when fully ripe and sorted first by flotation, then by hand, in order to remove over or under ripe cherries. It is then mechanically pulped and run under a stream of water to remove any remaining mucilage before being dry fermented for 24 to 36 hours. Finally, it is spread on raised beds for 10 days for a slow and homogeneous drying. Round and sweet, it can be enjoyed as an espresso or a filter, offering a silky espresso or a comforting filter.
This round and sweet coffee develops aromas of peaches and stone fruits. Creamy in the mouth, it reminds us of cocoa and the sweetness of cane sugar.
